HOW TO COOK BIRD'S NEST

Cooking Method (One to two serving)

Preparing: Rinse with a calendar and soak one to two pieces of natural bird’s nest for 4 hours to overnight. Change the soaking water 4 to 5 times during soaking. Rinse out all the soaking water and the bird’s nest is ready for cooking.
Cooking:

1. Double boiling - Put the bird’s nest into a ceramic pot with water (One cup of water per one piece of nest.) Cover with a ceramic lid.

2. Put the ceramic pot with bird’s nests into a larger cooking pot and fill water one inch below the rim of the ceramic pot. Cover with pot lid. Use high heat to bring the water in larger pot to boil (about 10 to 15 mins.) Then turn to low heat to cook for 45 minutes to 4 hours depending on the type of nests you are cooking.
In general, White Nests take 45 minutes to 1 hour to cook. Golden Nests take 2 to 3 hours to cook. Red Nests take 3 to 4 hours to cook.

3. After cooking, turn off the heat and open the ceramic lid to prevent over cooking. Add rock sugar, honey or milk and it is ready to serve. Or put the cooked nests in refrigerator to chill and serve within 3 to 5 days.

Note: To avoid cross contaminating the cooked nests, always use dry and clean utensils.

HISTORY OF BIRD'S NEST

According to many classical Chinese books about health food, swiftlet nest was imported into China from the Southeast Asian region since the T'ang Dynasty (A.D. 618-907). Chinese records on swiftlet nest consist mainly of several categories of historical documentation, including official histories, notes of scholars, travel records, books on dining, books on health food, and books on medical herbs. Swiftlet nest became well known by physicians, connoisseurs, encyclopedic scholars, and traders beginning in the early 17th Century. Consequently, Swiftlet nest developed into a well-known and well-accepted precious health food.

From the historical documents, a progressive familiarity of the swiftlet nest evolved through time. The records of around year 1587 show that large amount of swiftlet nest was imported into China and an import duty was levied on the nest. In 1618, the amount of swiftlet nest imported had increased so much that a reduction on the import duty was granted by the emperor of the Ming Dynasty. At that time, swiftlet nest was well accepted as precious food by residents of Guangdong and Fujian Provinces. From then on, records about swiftlet nest became more detailed and covered even its place of origin.
Hundreds of years after swiftlet nest had been accepted as a precious food in China, it was further accepted by the Chinese to have medical and health enhancing effects. Descriptions of such effects

are found in the works of two famous practitioners of Chinese medicine in the Qing Dynasty. The medical and health-enhancing effects of swiftlet nest have been formally confirmed and accepted by Chinese medical practitioners after centuries of observation and validation. Swiftlet nest has been considered able to slow down the aging process, in other words, a rejuvenating agent. Swiftlet nest also acts as a demulcent to the lungs and has been used in relieving phlegm and coughs.

Bird's nest / bird's nest soup is a delicacy in Chinese cuisine. A few species of swiftlet, the cave swiftlets, are renowned for building the saliva nests used to produce the unique texture of this soup.The Chinese name for bird's nest soup, yàn wō ( 燕窝 ) , translates literally as "swiftlet nest". When dissolved in water, the birds' nests have a gelatinous texture used for soup.
The edible bird's nests are among the most expensive animal products consumed by humans. The bird's nests have been traditionally used in Chinese cooking for more than 400 years, most often as bird's nest soup.
The most heavily harvested nests are from the Edible-nest Swiftlet or White-nest Swiftlet and the Black-nest Swiftlet. The white nests (house nest) and the cave nest are supposedly rich in nutrients which are traditionally believed to provide health benefits, such as aiding digestion, raising libido, improving the voice, alleviating asthma, improving focus, and an overall benefit to the immune system.
The bird's nests are built during the breeding season by the male swiftlet over a period of 45 days. They take the shape of a shallow cup stuck to the cave wall. The nests are composed of interwoven strands of salivary laminate cement. Both nests have high levels of calcium, iron, potassium, and magnesium.
Hong Kong and China are the largest importers of bird's nests. In Hong Kong a bowl of Bird Nest Soup would cost USD 30 USD to USD 100. A kilogram of white nest can cost up to USD 4,500, and a kilogram of “red blood” nest can cost up to $10,000 USD.
The bird's nests were traditionally harvested from caves called as Cave Nest, principally the enormous limestone caves at Gomantong and Niah in Borneo. With the escalation in demand these sources have been supplanted since the late 1990s by purpose-built swiftlet houses, usually reinforced concrete structures following the design of the Southeast Asian shop-house. These swiftlet houses are normally found in urban areas near the sea or forest in Malaysia, since the swiftlets have a propensity to flock in such places. This has become an extraordinary industry call as swiftlet farming, mainly based on a series of towns in Malaysia which have been completely transformed by the activity. From there the nests are mostly exported to Hong Kong, which has become the centre of the world trade, though most of the final consumers are from mainland China.

六.燕窝炖法和吃法
炖燕窝最好是采用不含氯成份的清水来炖煮,或是用蒸馏水(R.O.水),在不然就用矿泉水,而且每人炖煮分量为5至6克。要注意的是浸泡和炖煮时间的长短,须视燕窝的品质和种类而定。屋燕炖煮的时间者则只需45分钟。吃燕窝的正确方法在于少食多餐,最好每日早晚各吃一次,或是每周至少使用3次,如此才能保证肠胃充分吸收燕窝的营养精华和功效。吃燕窝最好是空肚吃,因空肚吃吸收力甚强。根据传统理论,人体在晚上11时至凌晨1时处于最松弛状态,而且很容易“归经”,滋阴食品很容易被人体吸收,过盛的热气也很容易排出体外。
七.燕窝的保存
燕窝价格昂贵,因此必须注意小心贮存,防止其受潮而发霉。一般可将燕窝装入干净的塑胶盒,内附防潮保护层和吸湿剂,密封並放于干燥处。冷藏效果较好,并注意防止潮气侵入。温度在摄氏5度左右时,燕窝可保存较长的时间。如少量贮存,可将燕窝包裹后装入塑胶袋,封口,并放入雪柜,可保不致变质。总之,燕窝应置于通风,阴凉和干爽之处,不宜在阳光下暴晒。

三.燕窝的种类
首先必须厘清,並非所有燕窝都可以食用,因一般燕子筑巢多是由树枝,杂草和泥土组成,所以並不能食用;只有一种分佈在东南亚的金丝燕,它会吐出唾液结于悬崖峭壁並筑成窝巢,再经人工采集,剔毛除污后才是可以食用的燕窝。其中白燕和黄燕是较长见的食用燕窝,而血燕窝则因数量少,颜色特殊而被视为珍品。其实,燕窝会有不同颜色的原因很多,如金丝燕的种类,栖息地及吞食的食物不同,唾液受空气氧化等,都可能是造成燕窝不同颜色的原因。燕窝以形状分类则有盏、条、饼、块、丝、碎、球等。以质地分类计有屋燕,洞燕、毛燕、草燕和没有商业价值的土燕。
四.从生物化学的角度看燕窝
根据香港中文大学江润祥教授和关培生先生写了一篇<燕窝考>,对燕窝的历史沿革所载甚详。江教授在一九八七年发表了一遍研究报告,证实了燕窝的蛋白质含有大量生物活性的蛋白份子,这些份子可能是滋补复壮之源。江氏在<燕窝考>中谓:[今日科学研究所知,燕窝确实含有表皮生长因子(Epidermal Growth Factor),燕窝的水提更可直接刺激细胞生长及对分裂原有增效作用(Mitogenic Stimulation Factor)。]
这些表皮生长因子的作用和中药医所说的补中益气功能互为呼应。学者们总结燕窝的三种功能为: :
一. 促进细胞组织的再生
二. 增加身体的免疫功能

二.燕窝的功效
