HOW TO COOK BIRD'S NEST

Cooking Method (One to two serving)

Preparing: Rinse with a calendar and soak one to two pieces of natural bird’s nest for 4 hours to overnight. Change the soaking water 4 to 5 times during soaking. Rinse out all the soaking water and the bird’s nest is ready for cooking.
Cooking:

1. Double boiling - Put the bird’s nest into a ceramic pot with water (One cup of water per one piece of nest.) Cover with a ceramic lid.

2. Put the ceramic pot with bird’s nests into a larger cooking pot and fill water one inch below the rim of the ceramic pot. Cover with pot lid. Use high heat to bring the water in larger pot to boil (about 10 to 15 mins.) Then turn to low heat to cook for 45 minutes to 4 hours depending on the type of nests you are cooking.
In general, White Nests take 45 minutes to 1 hour to cook. Golden Nests take 2 to 3 hours to cook. Red Nests take 3 to 4 hours to cook.

3. After cooking, turn off the heat and open the ceramic lid to prevent over cooking. Add rock sugar, honey or milk and it is ready to serve. Or put the cooked nests in refrigerator to chill and serve within 3 to 5 days.

Note: To avoid cross contaminating the cooked nests, always use dry and clean utensils.
